Ideal dipping sauce for prawns
1 tablespoon seasame oil
1 small red chilli, fresh or dried, deseeded and finely chopped
1 tablespoon root ginger, finely chopped
1 tablespoon lemon grass, finely chopped(available at large supermarkets)
juice of 1 lime
1 teaspoon honey
1 garlic clove , crushed
3 tablespoon soy sauce
- Heat the sesame oil in a small pan and fry the chilli root ginger, lemon grass, lime juice and garlic for 1 minute to release the flavours
- Add the soy sauce anf honey and bring to the boil
- Allow to cool a little and either pour over the fish or place in small bowls for dipping into
- If you want a smooth sauce, whizz in a food processor after cooking
- Can be served hot or cold
