Serves 8 as a starter

1 hour chilling needed

400 – 500gm Smoked Salmon

3 medium size, ripe avocado

juice of 1 lime

2 spring onions, finely chopped

50gm cream cheese

pinch cayenne pepper

watercress & fresh chives for garnish

Dressing

2 spring onions , finely chopped

2 tablespoon freshly squeezed orange juice

6 tablespoon extra virgin olive oil

salt & ground black pepper for seasoning

 

  • Cut each avocado in half and remove stone, cut again into quarters, the peel the skin from each quarter
  • Put the avocado into a food processor with the lime juice, spring onions, cream cheese and cayenne pepper, season and whizz until smooth
  • Spoon into a small bowl, cover with cling film, and chill for 1 hour
  • Meanwhile make the dressing. Put the spring onions into a bowl with the orange juice, olive oil  and plenty of seasoning and whisk well
  • When you are ready to serve, divide the Smoked Salmon between the plates then add a spoonfull of the avocado pate next to the salmon, spoon some orange dressing around the edge of each plate and garnish with the watercress and chives
