Roasted Plaice Fillets
Serves 2
2 portion plaice fillets
75g freshly grated parmesan cheese
110g white bread, slightly stale cut into cubes
a handful of fresh curly parsley leaves
50g melted butter, plus a little extra for brushing
salt and pepper
- Line a baking tray with foil and brush the foil generously with melted butter
- Lay the fillets on the foil and season with salt and pepper
- Place the cubes of bread and parsley leaves in a food processor and whiz to fine crumbs, then add the parmesan, melted butter, ½ a level teaspoon of some salt and pepper and whiz again to mix them
- Spread the crumb mixture over the fish fillets, drizzle over a little more melted butter
- Place the tray on a high shelf in the oven for 7-8 minutes or until the crumbs have turned a golden brown
- Serve with lemon quarters to squeeze over and a sprig of parsley as a garnish
