BBQ Trout Recipe from Fish in a Box
4 rainbow trout 250g-280g cleaned and gutted.
half a teaspoon crushed chillies
1 tablespoon Sweet paprika
1 teaspoon Salt
4 finely chopped Shallots
Chilli oil for brushing
1. Rinse the trout and dry with kitchen paper.
2- Mix the crushed chillies, paprika, and Salt in a small bowl. Sprinkle half the mixture inside the cavities of the fish and divide the chopped shallots among them.
3. Brush the outside of the fish with oil and Sprinkle with a little more of the mixed spices.
4. Grill on a medium coal brushing occasionally with more oil and sprinkle with the remaining Spice mix. Cook for 4 to 5 Minutes on each side or until cooked through.
Serve immediately with lime wedges.
